Ingredients

  • 1 1/2 cups sweetened shredded coconut

  • 1/2 cup almond butter (or peanut butter)

  • 1/4 cup honey or maple syrup

  • 1/2 cup chocolate chips (dark, milk, or semi-sweet)

Instructions

  • Preheat the oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

  • Mix the ingredients: In a large bowl, combine shredded coconut, almond butter, and honey (or maple syrup). Stir until a dough-like consistency forms.

  • Shape the cookies: Scoop out tablespoon-sized portions of the dough, roll them into balls, and place them on the baking sheet about 2 inches apart. Gently flatten each ball with the back of a spoon or your fingers.
