Instructions
- Make the Marshmallow Layer: In a medium mixing bowl, whip the heavy cream with powdered sugar and vanilla extract until soft peaks form. Be careful not to over-whip the cream, as it should stay fluffy and light.
- Melt the Marshmallows: In a saucepan over low heat, melt the mini marshmallows, stirring constantly until they’re smooth and fully melted. You can also melt them in the microwave in 30-second intervals, stirring in between.
- Combine Marshmallow and Whipped Cream: Once the marshmallows have melted, fold the marshmallow mixture into the whipped cream until well combined. This will create the marshmallow fluff layer for the sandwiches.
- Assemble the Sandwiches:
- Melt the Chocolate: Melt the chocolate chips by microwaving them in 30-second intervals, stirring after each interval, until smooth and fully melted. You can also melt the chocolate using a double boiler.
- Prepare the Graham Crackers: If you prefer a crunchier crust, you can brush the broken graham crackers with melted butter before assembling. Arrange 10 graham cracker halves on a parchment-lined baking sheet or tray.
- Layer the Marshmallow and Chocolate: Spread a generous layer of the marshmallow mixture on top of each graham cracker half. Then, drizzle or spread a small amount of melted chocolate over the marshmallow. Top each with another graham cracker half to form a sandwich.
