Ingredients

  • 2 cups mini marshmallows (or regular marshmallows, cut into small pieces)
  • 1 cup heavy cream
  • 1/4 cup powdered sugar

  • 10 graham crackers, broken into halves (about 20 pieces)
  • 2 tablespoons butter, melted (optional, for the graham cracker crust)

Instructions

  1. Make the Marshmallow Layer: In a medium mixing bowl, whip the heavy cream with powdered sugar and vanilla extract until soft peaks form. Be careful not to over-whip the cream, as it should stay fluffy and light.
  2. Melt the Marshmallows: In a saucepan over low heat, melt the mini marshmallows, stirring constantly until they’re smooth and fully melted. You can also melt them in the microwave in 30-second intervals, stirring in between.
  3. Combine Marshmallow and Whipped Cream: Once the marshmallows have melted, fold the marshmallow mixture into the whipped cream until well combined. This will create the marshmallow fluff layer for the sandwiches.
  4. Assemble the Sandwiches:
    • Melt the Chocolate: Melt the chocolate chips by microwaving them in 30-second intervals, stirring after each interval, until smooth and fully melted. You can also melt the chocolate using a double boiler.
    • Prepare the Graham Crackers: If you prefer a crunchier crust, you can brush the broken graham crackers with melted butter before assembling. Arrange 10 graham cracker halves on a parchment-lined baking sheet or tray.
