Description

Air Fryer Sourdough Bread is a small-batch, crusty loaf baked right in your air fryer. With a crisp exterior and tender, chewy crumb, it’s a fast and efficient way to enjoy artisan-style bread without using a traditional oven.

Ingredients

  • 1/2 cup active sourdough starter
  • 1 3/4 cups bread flour (or all-purpose flour)
  • 1/2 cup water
  • 1 teaspoon salt

Instructions

  1. In a large bowl, mix the sourdough starter, flour, and water until just combined. Cover and let rest for 30 minutes (autolyse).
  2. Add salt and knead until smooth, about 5–7 minutes by hand or with a dough hook.
  3. Cover and let rise at room temperature for 4–6 hours. During the first 2 hours, perform stretch and folds every 30–45 minutes.
  4. Shape the dough into a round loaf and place in a floured proofing basket or towel-lined bowl.
  5. Cover and refrigerate for 8–12 hours (overnight cold proof).
  6. Preheat air fryer to 375°F (190°C).
  7. Place the dough on parchment paper, score the top with a sharp knife or lame.
  8. Transfer the dough (on parchment) into the air fryer basket.
  9. Bake for 25–30 minutes, or until the crust is golden and the loaf sounds hollow when tapped.
  10. Cool completely on a wire rack before slicing.

Notes

Use parchment paper to prevent sticking in the air fryer basket.Add herbs, cheese, or seeds to customize your loaf.Refrigerating the dough overnight enhances the sourdough flavor. If browning too quickly, cover the loaf loosely with foil halfway through.Let the loaf cool fully for clean slicing and best texture.
