Description

Almond Brittle is a crunchy, sweet, and buttery candy made with roasted almonds and caramelized sugar. This classic treat is simple to prepare and perfect for gifting, snacking, or holiday entertaining.


Ingredients

  • 1 cup granulated sugar
  • 1/2 cup light corn syrup
  • 1/4 cup water
  • 1/4 cup unsalted butter
  • 1 1/2 cups roasted almonds (whole or chopped)
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  1. Line a baking sheet with parchment paper or a silicone baking mat. Set aside.
  2. In a heavy-bottomed saucepan, combine sugar, corn syrup, water, and butter.
  3. Heat over medium heat, stirring constantly until the sugar dissolves and the mixture begins to boil.
  4. Stop stirring and continue cooking until the mixture reaches 300°F (hard crack stage) on a candy thermometer.
  5. Remove from heat immediately and stir in baking soda, salt, vanilla extract, and almonds.
  6. Quickly pour the mixture onto the prepared baking sheet and spread it evenly with a spatula.
  7. Let it cool completely at room temperature, about 30 minutes.
  8. Once hardened, break the brittle into pieces and store in an airtight container.

Use a candy thermometer for best results to avoid undercooking or overcooking.Work quickly once the brittle is off the heat, as it hardens fast.Store in a cool, dry place to keep the brittle crisp.Do not refrigerate or freeze, as moisture can cause stickiness.
