Ingredients
- 1 cup granulated sugar
- 1/2 cup light corn syrup
- 1/4 cup water
- 1/4 cup unsalted butter
- 1 1/2 cups roasted almonds (whole or chopped)
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
Instructions
- Line a baking sheet with parchment paper or a silicone baking mat. Set aside.
- In a heavy-bottomed saucepan, combine sugar, corn syrup, water, and butter.
- Heat over medium heat, stirring constantly until the sugar dissolves and the mixture begins to boil.
- Stop stirring and continue cooking until the mixture reaches 300°F (hard crack stage) on a candy thermometer.
- Remove from heat immediately and stir in baking soda, salt, vanilla extract, and almonds.
- Quickly pour the mixture onto the prepared baking sheet and spread it evenly with a spatula.
- Let it cool completely at room temperature, about 30 minutes.
- Once hardened, break the brittle into pieces and store in an airtight container.
