Description

Almond Cookies are delicate, buttery treats with crisp edges and a tender center, infused with rich almond flavor. They’re simple to make and perfect for any occasion, from holiday platters to afternoon tea.


Ingredients

  • 1 3/4 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 3/4 cup unsalted butter, softened
  • 2/3 cup granulated sugar
  • 1 large egg
  • 1 tsp almond extract
  • Sliced or whole almonds for garnish (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, baking powder, and salt. Set aside.
  3. In a large mixing bowl, cream the softened butter and granulated sugar until light and fluffy.
  4. Beat in the egg and almond extract until fully incorporated.
  5. Gradually add the dry ingredients, mixing until a soft dough forms.
  6. Roll dough into small balls (about 1 tablespoon each) and place them 2 inches apart on the prepared baking sheet.
  7. Flatten each ball slightly with your fingers or the bottom of a glass.
  8. Press a sliced or whole almond on top of each cookie, if desired.
  9. Bake for 10–12 minutes, or until edges are lightly golden.
  10. Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

For extra almond flavor, substitute 1/4 cup of the flour with almond flour.Chill dough for 30 minutes if you want thicker, less spread cookies.Top with a drizzle of melted chocolate for an elegant twist.Add a pinch of cinnamon or cardamom for warmth and spice.Use gluten-free flour blend to make these cookies gluten-free.
