Ingredients
- 1 3/4 cups all-purpose flour
- 1/2 tsp baking powder
- 1/4 tsp salt
- 3/4 cup unsalted butter, softened
- 2/3 cup granulated sugar
- 1 large egg
- 1 tsp almond extract
- Sliced or whole almonds for garnish (optional)
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, whisk together flour, baking powder, and salt. Set aside.
- In a large mixing bowl, cream the softened butter and granulated sugar until light and fluffy.
- Beat in the egg and almond extract until fully incorporated.
- Gradually add the dry ingredients, mixing until a soft dough forms.
- Roll dough into small balls (about 1 tablespoon each) and place them 2 inches apart on the prepared baking sheet.
- Flatten each ball slightly with your fingers or the bottom of a glass.
- Press a sliced or whole almond on top of each cookie, if desired.
- Bake for 10–12 minutes, or until edges are lightly golden.
- Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
Notes
For extra almond flavor, substitute 1/4 cup of the flour with almond flour.Chill dough for 30 minutes if you want thicker, less spread cookies.Top with a drizzle of melted chocolate for an elegant twist.Add a pinch of cinnamon or cardamom for warmth and spice.Use gluten-free flour blend to make these cookies gluten-free.
