Description

Ingredients

  • 4 boneless, skinless chicken breasts

  • 1 tablespoon olive oil

  • 1 tablespoon unsalted butter

  • 2 cloves garlic, minced

  • 1/2 cup dry white wine (optional, or substitute with chicken broth)

  • 1 cup heavy cream

  • 1/4 cup chicken broth

  • 1 tablespoon fresh lemon juice

  • 1 teaspoon dried thyme (or 1 tablespoon fresh thyme)

  • Salt and pepper, to taste

  • 1/4 cup grated Parmesan cheese

  • Fresh parsley, chopped (for garnish)

Instructions

  • Prepare the Chicken:

    • Season the chicken breasts with salt and pepper on both sides.

    • Heat olive oil in a large skillet over medium-high heat. Once hot, add the chicken breasts and cook for 5-7 minutes per side until golden brown and cooked through (internal temperature should reach 165°F/74°C).

    • Remove the chicken from the skillet and set it aside.

  • Make the Sauce:

    • In the same skillet, melt the butter over medium heat. Add the minced garlic and cook for about 1 minute until fragrant, stirring constantly to avoid burning.

    • If using white wine, pour it in and bring to a simmer. Let it cook for 2-3 minutes, allowing the wine to reduce slightly. If you prefer to skip the wine, substitute it with chicken broth.

    • Add the chicken broth, heavy cream, lemon juice, and thyme to the skillet. Stir to combine and bring the sauce to a simmer. Cook for 5-7 minutes, or until the sauce thickens slightly.

  • Combine the Chicken and Sauce:

    • Return the cooked chicken breasts to the skillet, nestling them in the sauce. Spoon some sauce over the chicken and let it simmer for an additional 5-10 minutes until the chicken is heated through and fully coated in the creamy sauce.

  • Finish and Serve:

    • Stir in the grated Parmesan cheese and allow it to melt into the sauce, thickening it slightly.

    • Taste the sauce and adjust the seasoning with more salt, pepper, or lemon juice as needed.

    • Serve the chicken breasts on plates and spoon the sauce over the top. Garnish with fresh parsley for an extra burst of color and flavor.
