Description
Apple cider donut cake delivers the cozy, nostalgic flavor of classic apple cider donuts in an easy baked cake. Made with reduced apple cider, warm spices, and finished with a cinnamon-sugar coating, it’s moist, fragrant, and perfect for fall.
Ingredients
- 2 cups apple cider
- 2 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 2 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/4 tsp ground cloves
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 2 large eggs
- 3/4 cup vegetable oil or melted butter
- 2 tsp vanilla extract
- 1/2 cup buttermilk or milk
- 4 tbsp butter, melted (for topping)
- 1/2 cup cinnamon sugar (for coating)
Instructions
- Pour the apple cider into a saucepan and simmer over medium heat until reduced by about half. Allow to cool completely.
- Preheat the oven to 350°F (175°C) and grease a bundt or tube pan thoroughly.
- In a bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves.
- In a separate bowl, mix granulated sugar, brown sugar, eggs, oil or melted butter, vanilla extract, and the cooled reduced cider until smooth.
- Stir in the buttermilk, then gradually add the dry ingredients, mixing just until combined.
- Pour the batter into the prepared pan and smooth the top.
- Bake for 40–45 minutes, or until a toothpick inserted into the center comes out clean.
- Cool the cake in the pan for 10 minutes, then turn out onto a wire rack.
- Brush the warm cake with melted butter and generously coat with cinnamon sugar.
- Let cool slightly before slicing and serving.
