Description
Apple Cider Donuts are soft, spiced cake donuts made with reduced apple cider and coated in cinnamon sugar. These cozy, fall-inspired treats are perfect for breakfast, dessert, or snacking during apple season.
Ingredients
- 1 1/2 cups apple cider (reduced to 1/2 cup)
- 2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 1/2 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/8 tsp ground allspice or cloves (optional)
- 1/2 cup unsalted butter, melted
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup whole milk or buttermilk
- 1/2 cup granulated sugar + 1–2 tsp ground cinnamon (for coating)
Instructions
- In a small saucepan, simmer apple cider over medium heat until reduced to about 1/2 cup. Let cool completely.
- Preheat oven to 350°F (175°C) and grease a donut pan.
- In a large bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, and allspice or cloves if using.
- In a separate bowl, whisk together melted butter, brown sugar, granulated sugar, eggs, vanilla, milk or buttermilk, and cooled reduced apple cider.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
- Spoon or pipe the batter into the prepared donut pan, filling each cavity about 3/4 full.
- Bake for 12–14 minutes, or until tops spring back when lightly touched and a toothpick inserted comes out clean.
- Let donuts cool in the pan for 5 minutes, then transfer to a wire rack.
- While still warm, toss each donut in the cinnamon sugar mixture to coat thoroughly.
Notes
Use fresh, unfiltered apple cider for the best flavor.Make cinnamon sugar by mixing 1/2 cup granulated sugar with 1–2 tsp cinnamon.Donuts are best coated while warm so the sugar adheres well.For a glazed version, skip the sugar coating and drizzle with apple cider glaze instead.Store donuts in an airtight container and re-coat with sugar if needed after reheating.
