Ingredients
- 2 cups rolled oats
- 1 tsp baking powder
- 1 1/2 tsp ground cinnamon
- 1/4 tsp salt
- 1 cup milk (dairy or non-dairy)
- 2 large eggs
- 1/3 cup maple syrup or honey
- 1/2 cup unsweetened applesauce
- 1 tsp vanilla extract
- 1 medium apple, finely chopped
- Optional: 1/4 cup chopped nuts, raisins, or flaxseed
Instructions
- Preheat your oven to 350°F (175°C). Grease or line a 12-cup muffin tin.
- In a large bowl, combine the oats, baking powder, cinnamon, and salt.
- In another bowl, whisk together the milk, eggs, maple syrup, applesauce, and vanilla extract.
- Pour the wet mixture into the dry ingredients and stir until well combined.
- Fold in the chopped apple and any optional add-ins.
- Divide the mixture evenly among the prepared muffin cups, filling almost to the top.
- Bake for 25–30 minutes, or until the tops are set and lightly golden.
- Let cool for a few minutes before removing from the pan. Serve warm or store for later.
