Instructions
- Preheat the oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with olive oil.
- Prepare the potatoes: Peel and cut the potatoes into wedges or thick slices. The size of the wedges can vary, but aim for uniformity to ensure they cook evenly.
- Season the potatoes: In a large bowl, combine the olive oil, lemon juice, minced garlic, dried oregano, salt, pepper, and paprika (if using). Stir until well combined. Add the potato wedges to the bowl and toss them in the seasoning mixture until they are evenly coated.
- Bake the potatoes: Arrange the seasoned potato wedges in a single layer on the prepared baking sheet. Pour the chicken or vegetable broth around the potatoes (not directly on top) to help them cook and get tender.
