Ingredients
- 4 salmon fillets
- ¼ cup orange juice
- 2 tbsp lime juice
- 2 tbsp lemon juice
- 2 cloves garlic, minced
- 2 tbsp olive oil
- ½ tsp salt
- ½ tsp black pepper
- 1 tsp paprika
- ½ tsp chili powder
- 1 cup fresh strawberries, diced
- 1 cup fresh mango, diced
- ¼ cup red onion, finely chopped
- 2 tbsp fresh cilantro, chopped
- 1 jalapeño, minced
- 1 tbsp honey
Instructions
- Preheat oven to 200°C (400°F) or heat a grill to medium-high.
- In a bowl, whisk together orange juice, lime juice, lemon juice, garlic, olive oil, salt, pepper, paprika, and chili powder.
- Place salmon fillets in a shallow dish and pour marinade over them. Let marinate for 15–20 minutes.
- In another bowl, combine strawberries, mango, red onion, cilantro, jalapeño, and honey. Toss gently and set aside.
- Transfer salmon to a lined baking sheet or grill.
- Bake for 12–15 minutes or grill for about 10 minutes, until salmon flakes easily with a fork.
- Remove from heat and let rest briefly.
- Top with strawberry mango salsa and serve immediately.
