Description

Baked Banana Fritters are a healthier, oven-baked twist on the classic fried favorite. Made with ripe bananas, warm spices, and a simple batter, these fritters are soft on the inside, golden on the outside, and perfect for breakfast, dessert, or snacking.


Ingredients

  • 2 ripe bananas, mashed
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 tsp ground cinnamon
  • 1/8 tsp nutmeg (optional)
  • 1/4 cup brown sugar or granulated sugar
  • 1 large egg
  • 1/4 cup milk (dairy or non-dairy)
  • 1 tsp vanilla extract
  • 2 tbsp melted butter or oil
  • Optional: powdered sugar or glaze for topping

Instructions

  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper or lightly grease a muffin tin.
  2. In a large bowl, mash bananas until smooth. Add egg, milk, vanilla, and melted butter or oil. Stir until combined.
  3. In a separate bowl, whisk together flour, baking powder, salt, cinnamon, nutmeg, and sugar.
  4. Gradually fold the dry ingredients into the wet mixture until a thick batter forms.
  5. Drop spoonfuls of batter onto the prepared baking sheet or into muffin tin wells.
  6. Bake for 12–15 minutes, or until golden and a toothpick inserted comes out clean.
  7. Allow to cool slightly. Dust with powdered sugar or drizzle with glaze before serving.

Notes

Use very ripe bananas for the best flavor and natural sweetness.Add chocolate chips, chopped nuts, or shredded coconut for variation.For a glaze, mix powdered sugar with a splash of milk and vanilla.Best served warm but also great at room temperature.Freeze unglazed fritters for up to 1 month and reheat before serving.
