These Baked Chicken Bites are juicy, crispy, and easy to make. A healthier alternative to fried nuggets, they’re perfect as a quick dinner, snack, or party appetizer.
Ingredients
- 1 lb boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
- 2 tbsp olive oil
- 1 cup breadcrumbs (panko or regular)
- 1/4 cup grated Parmesan cheese
- 1 tsp garlic powder
- 1 tsp paprika
- 1/2 tsp salt
- 1/2 tsp black pepper
- Optional: 1 tsp dried herbs like parsley or Italian seasoning
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly grease it.
- In a bowl, toss the chicken pieces with olive oil until evenly coated.
- In a separate bowl, combine breadcrumbs, Parmesan cheese, garlic powder, paprika, salt, pepper, and optional dried herbs.
- Coat each chicken piece in the breadcrumb mixture, pressing gently to ensure the coating sticks.
- Place the coated chicken bites on the prepared baking sheet in a single layer.
- Bake for 18–22 minutes or until the chicken is cooked through and the coating is golden and crispy.
- Serve hot with your favorite dipping sauce.
Notes
Add cayenne or chili powder for a spicy kick.Use gluten-free breadcrumbs for a gluten-free version.Store leftovers in the fridge for up to 3 days.Reheat in the oven or air fryer for best results.Don’t microwave to reheat as it makes the coating soggy.
