Description

These Baked Chicken Bites are juicy, crispy, and easy to make. A healthier alternative to fried nuggets, they’re perfect as a quick dinner, snack, or party appetizer.


Ingredients

  • 1 lb boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
  • 2 tbsp olive oil
  • 1 cup breadcrumbs (panko or regular)
  • 1/4 cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • Optional: 1 tsp dried herbs like parsley or Italian seasoning

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly grease it.
  2. In a bowl, toss the chicken pieces with olive oil until evenly coated.
  3. In a separate bowl, combine breadcrumbs, Parmesan cheese, garlic powder, paprika, salt, pepper, and optional dried herbs.
  4. Coat each chicken piece in the breadcrumb mixture, pressing gently to ensure the coating sticks.
  5. Place the coated chicken bites on the prepared baking sheet in a single layer.
  6. Bake for 18–22 minutes or until the chicken is cooked through and the coating is golden and crispy.
  7. Serve hot with your favorite dipping sauce.

Notes

Add cayenne or chili powder for a spicy kick.Use gluten-free breadcrumbs for a gluten-free version.Store leftovers in the fridge for up to 3 days.Reheat in the oven or air fryer for best results.Don’t microwave to reheat as it makes the coating soggy.
