Description

These Baked Vanilla Cardamom Nectarines are a simple yet elegant dessert that highlights the natural sweetness of ripe nectarines. Roasted with warm cardamom, fragrant vanilla, and a touch of caramelized brown sugar, this easy stone fruit dessert is perfect for summer entertaining, light desserts, or even a wholesome breakfast served with yogurt.


Ingredients

  • 4 ripe nectarines, halved and pitted
  • 2 tablespoons brown sugar or honey

  • 1 teaspoon vanilla extract

  • ½ teaspoon ground cardamom

  • 2 tablespoons unsalted butter, melted

  • Pinch of salt

  • 1 teaspoon fresh lemon juice

Optional for Serving:

  • Vanilla ice cream

  • Greek yogurt

  • Whipped cream

  • Chopped pistachios or almonds


Instructions

  • Preheat oven to 375°F (190°C). Lightly grease a baking dish.

  • Arrange nectarine halves cut-side up in the dish.

  • In a small bowl, mix melted butter, brown sugar (or honey), vanilla extract, cardamom, salt, and lemon juice.

  • Spoon mixture evenly over nectarines, allowing it to pool in the centers.

  • Bake for 20–25 minutes, until nectarines are tender and caramelized around the edges.

  • Spoon pan juices over the fruit before serving.

  • Serve warm with ice cream, yogurt, or whipped cream if desired
