Instructions
- In a medium bowl, mash the ripe bananas until smooth.
- Add egg, milk, and vanilla extract to the bananas and mix well.
- In a separate bowl, whisk together flour, baking powder, sugar, salt, and cinnamon (if using).
- Gradually stir the dry ingredients into the banana mixture until a thick, spoonable batter forms.
- Heat about 2 inches of oil in a deep skillet over medium heat until it reaches 350°F (175°C).
- Drop spoonfuls of batter carefully into the hot oil, a few at a time to avoid overcrowding.
- Fry for 2–3 minutes per side, or until fritters are golden brown and cooked through.
- Remove with a slotted spoon and drain on a paper towel-lined plate.
- Serve warm, dusted with powdered sugar or drizzled with honey.
