Description

Banana Nut Mug Cake is a soft, quick, single-serve treat made with ripe banana, chopped nuts, and pantry staples. This microwave cake is moist, flavorful, and ready in just minutes—perfect for a fast snack or dessert.


Ingredients

  • 1 ripe banana
  • 3 tbsp all-purpose flour
  • 1/4 tsp baking powder
  • 1 tbsp brown sugar or granulated sugar
  • 1 tbsp milk (dairy or non-dairy)
  • 1 tbsp vegetable oil or melted butter
  • 1/4 tsp vanilla extract
  • 1 tbsp chopped walnuts or pecans
  • Pinch of salt
  • 1/4 tsp ground cinnamon (optional)

Instructions

  1. In a microwave-safe mug (at least 12 oz), mash the banana with a fork until smooth.
  2. Add sugar, milk, oil, and vanilla extract to the mug. Stir to combine.
  3. Stir in flour, baking powder, salt, and cinnamon (if using) until just combined—do not overmix.
  4. Fold in the chopped nuts.
  5. Microwave on high for 1 minute and 30 seconds to 2 minutes, or until the top is set and a toothpick inserted into the center comes out clean.
