Ingredients
- 1 ripe banana
- 3 tbsp all-purpose flour
- 1/4 tsp baking powder
- 1 tbsp brown sugar or granulated sugar
- 1 tbsp milk (dairy or non-dairy)
- 1 tbsp vegetable oil or melted butter
- 1/4 tsp vanilla extract
- 1 tbsp chopped walnuts or pecans
- Pinch of salt
- 1/4 tsp ground cinnamon (optional)
Instructions
- In a microwave-safe mug (at least 12 oz), mash the banana with a fork until smooth.
- Add sugar, milk, oil, and vanilla extract to the mug. Stir to combine.
- Stir in flour, baking powder, salt, and cinnamon (if using) until just combined—do not overmix.
- Fold in the chopped nuts.
- Microwave on high for 1 minute and 30 seconds to 2 minutes, or until the top is set and a toothpick inserted into the center comes out clean.
