Description

BBQ chicken quesadillas are crispy, cheesy, and packed with smoky barbecue flavor. Made with shredded chicken, tangy BBQ sauce, and melted cheese between golden tortillas, they’re perfect for a quick meal or party snack.


Ingredients

  • 2 cups cooked chicken breast or thighs, shredded
  • 1/2 cup barbecue sauce
  • 8 flour tortillas
  • 2 cups shredded cheese (cheddar, Monterey Jack, or blend)
  • 1/4 cup red onion, thinly sliced (optional)
  • 2 tablespoons fresh cilantro, chopped (optional)
  • 2 tablespoons olive oil or butter, for cooking

Instructions

  1. In a bowl, mix shredded chicken with barbecue sauce until evenly coated.
  2. Heat a skillet over medium heat and coat lightly with butter or oil.
  3. Place one tortilla in the skillet and sprinkle with cheese.
  4. Add a layer of BBQ chicken, onion, and cilantro (if using).
  5. Top with more cheese, then place a second tortilla on top.
  6. Cook until the bottom tortilla is golden brown, then carefully flip and cook the other side until crisp and the cheese is melted.
  7. Remove from skillet, let rest for 1 minute, then slice into wedges and serve.
