-
1/4 cup salsa
-
1 tablespoon fresh cilantro, chopped (optional)

Instructions
-
Cook the Beef:
In a skillet, heat olive oil over medium heat. Add the ground beef and cook until browned, breaking it up with a spoon. Drain any excess fat. -
Season the Beef:
Stir in the taco seasoning with a small amount of water (as directed on the seasoning packet or based on your homemade seasoning). Simmer for 3-5 minutes until the beef is fully coated and flavorful. Remove from heat and set aside to cool slightly. -
Prepare the Salad:
In a large mixing bowl, combine the chopped romaine lettuce, cherry tomatoes, red onion, shredded cheese, black beans (if using), and black olives (if using). -
Assemble the Salad:
Add the cooked ground beef to the salad and toss to combine. -
Add Chips and Dressing:
Just before serving, sprinkle the crushed tortilla chips on top for crunch. In a small bowl, mix the sour cream and salsa to make a simple dressing. Drizzle over the salad or serve it on the side. -
Garnish and Serve:
Garnish with chopped cilantro and lime wedges, then serve immediately.
Notes
Protein Swap: Ground turkey, chicken, or plant-based meat alternatives can be used instead of ground beef.More Veggies: Add sliced bell peppers, corn, or diced avocado for more flavor and color.Dressing Options: Instead of sour cream and salsa, try ranch dressing, guacamole, or a cilantro-lime dressing. For a Lighter Version: Skip the tortilla chips or use baked tortilla chips for a helthier alternative.Spicy Kick: Add sliced jalapeños, hot sauce, or diced chilies for extra heat.
