Description

Biscoff s’mores bars are a gooey, chocolatey dessert made with a buttery Biscoff cookie crust, rich melted chocolate, and golden marshmallows. They’re a no-campfire-needed twist on classic s’mores, with a caramelized cookie flavor that makes them extra special.


Ingredients

  • 2 cups Biscoff cookies, crushed
  • 1/2 cup butter, melted
  • 2 tbsp granulated sugar (optional)
  • 1/2 cup Biscoff spread (optional)
  • 2 cups milk chocolate chips or 45 milk chocolate bars
  • 3 cups mini marshmallows (or 1 jar marshmallow creme)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and line an 8×8 or 9×9-inch baking dish with parchment paper.
  2. Mix crushed Biscoff cookies with melted butter (and sugar if using). Press firmly into the pan to form the crust. Bake for 8–10 minutes, then let cool slightly.
  3. If using, spread a thin layer of Biscoff spread over the crust.
  4. Evenly layer chocolate bars or sprinkle chocolate chips over the crust.
  5. Top with marshmallows (or spread marshmallow creme).
  6. Return to oven and bake for 10–12 minutes, or until marshmallows are golden and chocolate is melted.
  7. Cool completely before slicing into bars with a greased or warm knife.

Notes

Use dark or white chocolate for different flavor twists.Top with chopped nuts, caramel drizzle, or extra Biscoff spread for indulgence.Swap Biscoff cookies for graham crackers to make them more traditional.Mini marshmallows melt evenly and create a prettier topping than large ones.Refrigerating before slicing helps get cleaner edges.
