Ingredients
- 2 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 3/4 cup granulated sugar
- 2 large eggs
- 1/4 cup unsalted butter, melted
- 1 teaspoon vanilla extract
- Optional: 1/2 teaspoon almond extract or 1 tablespoon citrus zest

Instructions
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a large bowl, whisk together flour, baking powder, and salt.
- In another bowl, beat eggs and sugar until light and fluffy. Mix in melted butter, vanilla extract, and optional flavorings.
- Gradually stir the dry ingredients into the wet mixture until a dough forms.
- Fold in desired mix-ins like nuts, dried fruit, or chocolate chips.
- Divide dough in half and shape into two 10–12 inch logs on the baking sheet. Flatten slightly.
- Bake for 25–30 minutes, or until logs are golden and firm. Let cool for 10–15 minutes.
- Reduce oven temperature to 300°F (150°C).
- Slice logs diagonally into 1/2-inch pieces using a serrated knife.
- Arrange slices cut side up on the baking sheet and bake for 10–12 minutes per side, until crisp and golden.
- Cool completely on a wire rack before serving or storing.
