Blistered Tomatoes with Burrata is a fresh and flavorful appetizer featuring juicy cherry tomatoes sautéed until lightly charred and paired with creamy burrata cheese. Finished with olive oil, garlic, basil, and optional balsamic glaze, this easy blistered tomatoes with burrata recipe is perfect for entertaining, summer gatherings, or a light Mediterranean-inspired meal.

Ingredients

  • 2 cups cherry or grape tomatoes

  • 8 ounces burrata cheese

  • 2 tablespoons olive oil (plus more for drizzling)

  • 2 garlic cloves, minced

  • ½ teaspoon salt (or to taste)

  • ¼ teaspoon black pepper

  • ¼ teaspoon red pepper flakes (optional)

  • Fresh basil leaves

  • Balsamic glaze (optional)

  • Crusty bread for serving

Instructions

  • Preheat a large skillet over medium-high heat. Add olive oil and allow it to warm.

  • Add the tomatoes in a single layer. Cook undisturbed for 3–4 minutes until skins begin to blister and lightly char.

  • Stir occasionally and continue cooking until tomatoes soften and release their juices (about 6–8 minutes total).

  • Add minced garlic and cook for 30 seconds until fragrant.

  • Season with salt, black pepper, and red pepper flakes if using.

  • Transfer the blistered tomatoes and their juices to a serving dish.

  • Gently place the burrata in the center of the warm tomatoes.

  • Drizzle with additional olive oil and balsamic glaze if desired.

  • Garnish with fresh basil leaves and a pinch of salt and pepper.

  • Serve immediately with crusty bread for dipping.

Notes

Use high heat to achieve proper blistering without overcooking the tomatoes.Allow burrata to sit at room temperature for about 15–20 minutes before serving for best texture. For oven roasting, bake at 425°F (220°C) for 15–20 minutes until blistered and slightly charred.Add toasted pine nuts or pistachios for texture variation.Best served fresh for optimal flavor and creaminess
