Ingredients
- 2 cups roasted peanuts (with or without skin)
- 1 1/2 cups granulated sugar
- 2 tablespoons water
- 1 tablespoon butter (optional)
- 1/2 teaspoon baking soda (optional)
- Pinch of salt (optional)
Instructions
- Prepare a parchment-lined tray or lightly grease a baking surface and set aside.
- In a heavy-bottomed saucepan over medium heat, combine the sugar and water.
- Cook without stirring until the sugar melts and turns a deep golden brown.
- Quickly stir in the roasted peanuts, coating them evenly in the caramelized sugar.
- If using, add butter and salt for extra flavor and smoothness.
- Optional: stir in baking soda to aerate the mixture slightly.
- Immediately pour the hot mixture onto the prepared tray and spread evenly with a spatula.
- Let the brittle cool completely until hardened, about 20 minutes.
- Break into pieces and serve or store.
