10 oz mini marshmallows (plus 1 cup extra for gooey texture, optional)

½ cup Biscoff cookie butter spread

6 cups Rice Krispies cereal
- ¼ cup crushed Biscoff cookies (optional topping)
Instructions

Line a 9×13-inch baking pan with parchment paper or lightly grease it with butter.

In a large saucepan over medium heat, melt the butter. Continue cooking while stirring frequently until the butter foams and develops golden brown bits with a nutty aroma. This is browned butter.

Reduce the heat to low and add the mini marshmallows. Stir continuously until the marshmallows are completely melted and smooth.

Stir in the Biscoff spread, vanilla extract, and salt until fully combined and creamy.

Remove the pan from heat and immediately add the Rice Krispies cereal. Gently fold until the cereal is evenly coated with the marshmallow mixture.

If using extra marshmallows, fold them in at this stage for extra gooey pockets.

Transfer the mixture into the prepared baking pan and gently press it into an even layer using a spatula or buttered hands. Do not press too firmly.
