Description

Bruschetta Chicken combines juicy, tender chicken with a vibrant topping of tomatoes, garlic, basil, and a drizzle of balsamic glaze for a refreshing and flavorful meal. Inspired by the classic Italian appetizer, this dish transforms it into a satisfying main course. Quick to make and bursting with Mediterranean flavors, Bruschetta Chicken is perfect for weeknight dinners or special occasions.

Ingredients

For the chicken:

  • 4 boneless, skinless chicken breasts

  • 1 tablespoon olive oil (for cooking)

  • Salt and pepper to taste

  • 1 teaspoon Italian seasoning (optional)

For the bruschetta topping:

  • 2 cups cherry tomatoes (diced)

  • 1/4 cup fresh basil (chopped)

  • 1 clove garlic (minced)

  • 1 tablespoon extra virgin olive oil

  • 1 tablespoon balsamic vinegar

  • Salt and pepper to taste

For garnish:

  • Balsamic glaze (optional, for drizzling)

  • Fresh basil leaves (optional)

Instructions

  • Cook the chicken:

    • Heat olive oil in a large skillet over medium-high heat or preheat the grill to medium-high.

    • Season the chicken with salt, pepper, and Italian seasoning (if using).

    • Cook the chicken for 6-7 minutes on each side in the skillet, or grill for 6-8 minutes per side, until the internal temperature reaches 165°F (74°C) and the chicken is cooked through.

    • Remove from heat and let it rest for a few minutes before serving.

  • Prepare the bruschetta topping:

    • In a medium bowl, combine the diced tomatoes, chopped basil, minced garlic, olive oil, balsamic vinegar, salt, and pepper.

    • Stir to combine and let the mixture sit for a few minutes to allow the flavors to meld together.

  • Assemble the bruschetta chicken:

    • Place each cooked chicken breast on a serving plate.

    • Spoon the bruschetta topping generously onto each chicken breast.

  • Garnish and serve:

    • Drizzle with balsamic glaze for extra flavor (optional).

    • Garnish with additional fresh basil leaves if desired and serve immediately.

Notes
