Description

This bulgur wheat salad is a fresh and healthy Mediterranean dish made with fluffy bulgur, crisp vegetables, and a zesty lemon-olive oil dressing. Perfect for meal prep, this easy bulgur salad is light, nutritious, and full of vibrant flavor.


Ingredients

  • 1 cup bulgur wheat
  • 2 cups boiling water or vegetable broth
  • 1 cup tomatoes, diced
  • 1 cucumber, diced
  • 1/4 cup red onion, finely chopped
  • 1/2 cup fresh parsley, chopped
  • 2 tbsp fresh mint, chopped
  • 3 tbsp lemon juice
  • 3 tbsp olive oil
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Place the bulgur wheat in a large bowl and pour boiling water or hot vegetable broth over it.
  2. Cover and let sit for 10–15 minutes until tender, then fluff with a fork.
  3. Add diced tomatoes, cucumber, red onion, parsley, and mint to the bulgur.
  4. In a small bowl, whisk together lemon juice, olive oil, salt, and black pepper.
  5. Pour the dressing over the salad and toss well to combine.
  6. Taste and adjust seasoning if needed.
  7. Chill for 15–20 minutes before serving for best flavor.
