Description

This Butter Bean Stew is a rich, hearty, and comforting plant-based meal made with creamy butter beans simmered in a flavorful tomato-based broth. Packed with vegetables, protein, and fiber, this easy one-pot vegan stew is perfect for cozy dinners, meal prep, and healthy eating.


Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 2 carrots, diced
  • 2 celery stalks, chopped
  • 1 bell pepper, chopped
  • 1 can (400g) diced tomatoes
  • 2 tablespoons tomato paste
  • 3 cups vegetable broth
  • 2 cans (or 3 cups cooked) butter beans
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt, to taste
  • Black pepper, to taste
  • 2 cups spinach or kale
  • 1 tablespoon lemon juice (optional)

Instructions

  • Heat olive oil in a large pot over medium heat.
  • Add onion, carrots, celery, and bell pepper; sauté until softened.
  • Stir in garlic and cook until fragrant.
  • Add tomato paste and cook for 1–2 minutes to deepen flavor.
  • Pour in diced tomatoes and vegetable broth; stir to combine.
  • Add butter beans, smoked paprika, thyme, bay leaf, salt, and pepper.
  • Bring to a boil, then reduce heat and simmer for 20–25 minutes.
  • Stir in spinach or kale and cook until wilted.
  • Add lemon juice if desired and adjust seasoning.
  • Remove bay leaf and serve hot.

Notes

Mash some of the beans to naturally thicken the stew.Add chili flakes for a spicy kick.Coconut milk can be added for a creamier variation.This stew tastes even better the next day as flavors develop.
