Ingredients

  • For the steak bites:
    • 1 lb sirloin or ribeye steak, cut into bite-sized cubes

    • 1 tsp fresh thyme (or 1/2 tsp dried thyme)
    • 1 tsp fresh rosemary (or 1/2 tsp dried rosemary)

  • For the garlic herb potatoes:
    • 1 lb baby potatoes, halved or quartered
    • 2 tbsp olive oil
    • 2 tbsp unsalted butter, melted
    • 3 cloves garlic, minced
    • 1 tsp fresh parsley, chopped (or 1/2 tsp dried parsley)
    • 1/2 tsp fresh thyme (or 1/4 tsp dried thyme)
    • 1/2 tsp fresh rosemary (or 1/4 tsp dried rosemary)
    • Salt and pepper to taste
    • 1/4 cup grated Parmesan cheese (optional, for extra flavor)

Instructions

  1. For the garlic herb potatoes:
    1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray.
    2. In a bowl, toss the halved or quartered baby potatoes with olive oil, melted butter, minced garlic, parsley, thyme, rosemary, salt, and pepper. Make sure the potatoes are well-coated with the seasoning mixture.
    3. Spread the seasoned potatoes evenly on the prepared baking sheet. Roast in the preheated oven for 25-30 minutes, or until the potatoes are golden brown and crispy on the edges, and fork-tender when pierced.
