Ingredients
- For the steak bites:
-
- 1 lb sirloin or ribeye steak, cut into bite-sized cubes
- 2 tbsp olive oil
- 3 tbsp unsalted butter
- 3 cloves garlic, minced
- 1 tsp fresh thyme (or 1/2 tsp dried thyme)
- 1 tsp fresh rosemary (or 1/2 tsp dried rosemary)
- Salt and pepper to taste
- For the garlic herb potatoes:
- 1 lb baby potatoes, halved or quartered
- 2 tbsp olive oil
- 2 tbsp unsalted butter, melted
- 3 cloves garlic, minced
- 1 tsp fresh parsley, chopped (or 1/2 tsp dried parsley)
- 1/2 tsp fresh thyme (or 1/4 tsp dried thyme)
- 1/2 tsp fresh rosemary (or 1/4 tsp dried rosemary)
- Salt and pepper to taste
- 1/4 cup grated Parmesan cheese (optional, for extra flavor)
Instructions
- For the garlic herb potatoes:
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray.
- In a bowl, toss the halved or quartered baby potatoes with olive oil, melted butter, minced garlic, parsley, thyme, rosemary, salt, and pepper. Make sure the potatoes are well-coated with the seasoning mixture.
- Spread the seasoned potatoes evenly on the prepared baking sheet. Roast in the preheated oven for 25-30 minutes, or until the potatoes are golden brown and crispy on the edges, and fork-tender when pierced.
- For an extra burst of flavor, sprinkle the grated Parmesan cheese over the potatoes during the last 5 minutes of roasting. Return to the oven to melt the cheese.
- For the butter steak bites:
- While the potatoes are roasting, season the steak bites with salt and pepper on all sides.
- Heat olive oil in a large skillet over medium-high heat. Once the pan is hot, add the steak bites in a single layer, making sure not to overcrowd the pan. Sear the steak bites for 2-3 minutes on each side until golden brown and cooked to your desired doneness (medium-rare to medium is recommended for tenderness). Remove the steak from the skillet and set it aside.
- In the same skillet, add the butter, minced garlic, fresh thyme, and rosemary. Stir and cook for 1-2 minutes until the garlic becomes fragrant and the butter melts.
- Return the steak bites to the skillet, tossing them in the garlic herb butter sauce for 1-2 minutes, making sure each piece is coated in the flavorful sauce. Adjust seasoning with more salt and pepper if needed.
- Serve:
- Serve the butter steak bites alongside the roasted garlic herb potatoes on a platter or individual plates. Drizzle any extra garlic butter sauce from the skillet over the steak bites for added flavor.
- Garnish the potatoes and steak with extra fresh parsley, if desired, and enjoy this hearty, flavorful meal!
Notes

Basil, oregano, or tarragon can offer different aromatic flavors.Grilled Version: If you prefer grilling, you can grill the steak bites and toss them with the garlic butter sauce after grilling. Grill the potatoes in a foil packet or on skewers for a smoky twist.
