Description

These Butter Toffee Cookies are rich, buttery treats packed with crunchy toffee bits that melt slightly while baking, creating a perfect balance of soft centers and lightly crisp edges. With their warm caramel-like flavor and simple preparation, these cookies are perfect for holidays, bake sales, or everyday baking. Enjoy them with coffee, tea, or a glass of milk for a comforting homemade dessert.

Ingredients

  • 2 ¼ cups all-purpose flour

  • ¾ cup unsalted butter, softened

  • ¾ cup brown sugar

  • ¼ cup granulated sugar

  • 2 eggs

  • 1 teaspoon vanilla extract

  • 1 teaspoon baking soda

  • ½ teaspoon salt

  • 1 cup toffee bits

  • ½ cup chocolate chips (optional)

  • ½ cup chopped pecans or walnuts (optional)

Instructions

  • Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.

  • In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.

  • Add the eggs and vanilla extract, mixing until well combined.

  • In a separate bowl, whisk together the flour, baking soda, and salt.

  • Gradually add the dry ingredients to the wet ingredients and mix until a soft dough forms.

  • Fold in the toffee bits and optional chocolate chips or chopped nuts.

  • Scoop tablespoon-sized portions of dough and place them on the prepared baking sheets, leaving space between each cookie.

  • Bake for 10–12 minutes or until the edges are lightly golden.

  • Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes
