Ingredients
- 4 cod fillets (about 150-200g each)
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 red bell peppers, sliced
- 2 green bell peppers, sliced
- 2 cloves garlic, minced
- 1 can (400g) diced tomatoes
- 1/2 cup dry white wine (optional)
- 1 teaspoon smoked paprika
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
- Lemon wedges (for serving, optional)
Instructions
- Heat the olive oil in a large pan or skillet over medium heat. Add the chopped onion and cook for 5 minutes until softened.
- Add the sliced red and green bell peppers to the pan and cook for another 5-7 minutes, stirring occasionally, until the peppers start to soften.
- Stir in the minced garlic and cook for 1-2 minutes until fragrant.
- Pour in the canned diced tomatoes and white wine (if using). Stir to combine, then add the smoked paprika, dried thyme, and bay leaf. Season with salt and pepper to taste.
- Simmer the sauce over low heat for 15-20 minutes, allowing the flavors to meld together and the sauce to thicken slightly.
- Season the cod fillets with salt and pepper. Gently place the fillets into the sauce, spooning some of the sauce over the fish. Cover and cook for 10-12 minutes, or until the cod is cooked through and flakes easily with a fork.
- Remove the bay leaf and discard. Serve the cod fillets with the sauce, garnished with fresh parsley and lemon wedges on the side if desired.
Notes
For an extra burst of flavor, you can add a pinch of red pepper flakes to the sauce for a slight kick.If you prefer a richer dish, you can stir in a splash of cream towards the end of cooking.Serve this dish with a side of rice, crusty bread, or a light green salad for a complete meal.You can substitute cod with other white fish like haddock or halibut if desired.
