Ingredients
- 2 boneless, skinless chicken breasts
- 2–3 tbsp Cajun seasoning
- 2 tbsp olive oil
- 1 tbsp butter
- 3 garlic cloves, minced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 small onion, sliced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup grated Parmesan cheese
- 12 oz pasta (fettuccine, penne, or choice)
- Salt and black pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Cook pasta according to package directions. Drain and set aside.
- Season chicken breasts with Cajun seasoning.
- Heat olive oil in a large skillet over medium-high heat. Cook chicken for 5–6 minutes per side until golden brown and cooked through. Remove and slice.
- In the same skillet, melt butter. Add garlic, onion, and bell peppers. Sauté until softened, about 4–5 minutes.
- Stir in chicken broth and heavy cream. Simmer 3–4 minutes until slightly thickened.
- Add Parmesan cheese and stir until melted into the sauce.
- Toss cooked pasta into the skillet until evenly coated.
- Return sliced chicken to skillet and stir gently to combine.
- Season with salt and pepper to taste. Garnish with parsley and extra Parmesan if desired. Serve warm.
