Description

Cajun Tortellini Soup is a creamy, spicy, and comforting one-pot meal made with cheesy tortellini, smoked sausage, Cajun seasoning, and hearty vegetables. This quick and flavorful soup is perfect for busy weeknights or cozy dinners.


Ingredients

  • 10 oz cheese tortellini (refrigerated or frozen)
  • 12 oz smoked sausage, sliced
  • 1 tablespoon olive oil or butter
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 bell pepper (red or green), chopped
  • 1 can (14.5 oz) diced tomatoes, with juice
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 12 teaspoons Cajun seasoning (to taste)
  • Salt and pepper, to taste
  • Fresh parsley or green onions, for garnish

Instructions

  1. Heat olive oil or butter in a large pot over medium heat. Add sliced smoked sausage and cook until browned.
  2. Add chopped onion, bell pepper, and minced garlic. Sauté until softened and fragrant, about 3–4 minutes.
  3. Stir in diced tomatoes with their juice, chicken broth, and Cajun seasoning. Bring the mixture to a simmer.
  4. Add cheese tortellini and cook according to package instructions, typically 5–7 minutes, until tender.
  5. Reduce heat to low and stir in heavy cream. Simmer for 3–5 more minutes to slightly thicken.
  6. Taste and adjust seasoning with salt and pepper if needed.
  7. Serve hot, garnished with chopped parsley or green onions.

Notes

For extra spice, add red pepper flakes or more Cajun seasoning.Use frozen tortellini directly; no need to thaw.Add spinach or kale in the final minutes of cooking for extra nutrition.To make ahead, cook tortellini separately and add just before serving.Reheat gently with a splash of broth as tortellini may absorb liquid over time.
