Ingredients
- 10 oz cheese tortellini (refrigerated or frozen)
- 12 oz smoked sausage, sliced
- 1 tablespoon olive oil or butter
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 bell pepper (red or green), chopped
- 1 can (14.5 oz) diced tomatoes, with juice
- 4 cups chicken broth
- 1 cup heavy cream
- 1–2 teaspoons Cajun seasoning (to taste)
- Salt and pepper, to taste
- Fresh parsley or green onions, for garnish
Instructions
- Heat olive oil or butter in a large pot over medium heat. Add sliced smoked sausage and cook until browned.
- Add chopped onion, bell pepper, and minced garlic. Sauté until softened and fragrant, about 3–4 minutes.
- Stir in diced tomatoes with their juice, chicken broth, and Cajun seasoning. Bring the mixture to a simmer.
- Add cheese tortellini and cook according to package instructions, typically 5–7 minutes, until tender.
- Reduce heat to low and stir in heavy cream. Simmer for 3–5 more minutes to slightly thicken.
- Taste and adjust seasoning with salt and pepper if needed.
- Serve hot, garnished with chopped parsley or green onions.
