Ingredients
- 10 large eggs
- 1/2 cup milk or half-and-half
- 3 cups frozen hash browns or diced potatoes, thawed
- 1 red bell pepper, diced
- 1/2 cup green onions, chopped
- 1 ripe avocado, sliced (for topping)
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
- In a large bowl, whisk together the eggs, milk, salt, and pepper.
- Spread the thawed hash browns evenly in the prepared baking dish.
- Top with diced red bell pepper and chopped green onions.
- Sprinkle cheddar and Monterey Jack cheeses evenly over the vegetables.
- Pour the egg mixture over the top of the layered ingredients.
- Bake for 40–45 minutes, or until the eggs are set and the top is golden brown.
- Let cool for 5–10 minutes, then top with sliced avocado before serving.
