Description

Caprese Stuffed Avocado is a vibrant and fresh twist on the classic Caprese salad, featuring ripe avocado halves filled with tomatoes, mozzarella, basil, and a drizzle of balsamic glaze. This light, flavorful dish is perfect for appetizers, snacks, or a healthy lunch.


Ingredients

  • For the stuffed avocado:
    • 2 ripe avocados, halved and pitted
    • 1 cup cherry or grape tomatoes, halved
    • 1/2 cup fresh mozzarella balls (bocconcini), halved (or shredded mozzarella)
    • 1/4 cup fresh basil leaves, chopped
    • 1 tbsp extra virgin olive oil
    • 1 tbsp balsamic glaze (or balsamic vinegar)
    • Salt and pepper to taste

Instructions

  1. Prepare the avocado: Cut the avocados in half and remove the pits. Use a spoon to scoop out a small portion of the flesh from each avocado half to create a little space for the filling.
  2. Make the Caprese filling: In a small bowl, combine the halved cherry tomatoes, mozzarella, and chopped basil. Drizzle with olive oil and toss together. Season with salt and pepper to taste.
  3. Stuff the avocados: Spoon the Caprese mixture into each avocado half, filling the hollowed-out space generously with the mixture.
  4. Drizzle with balsamic glaze: Drizzle the stuffed avocados with balsamic glaze or balsamic vinegar for a tangy finish.
  5. Serve: Serve immediately as an appetizer, side dish, or light lunch. Garnish with extra basil leaves if desired.

Notes

Add protein: For a more filling dish, add grilled chicken, shrimp,  to the Caprese filling.Vegan option: Skip the mozzarella and use vegan mozzarella or a plant-based cheese alternative. You can also sprinkle nutritional yeast for a cheesy flavor.Spicy variation: Add sliced jalapeños or a dash of red pepper flakes for a spicy kick.Pesto twist: Mix pesto into the filling instead of using olive oil for added richness and basil flavor.
