Description

Ingredients

For the Cookies

  • 1 ½ cups all-purpose flour

  • ½ teaspoon baking soda

  • 1 teaspoon ground cinnamon

  • ½ cup unsalted butter, softened

  • ½ cup brown sugar

  • ¼ cup granulated sugar

  • 1 large egg

  • 1 cup finely grated carrots

  • ½ cup rolled oats

  • ⅓ cup chopped walnuts or pecans

  • ⅓ cup raisins

For the Cream Cheese Glaze

  • 4 oz cream cheese, softened

  • 1 cup powdered sugar

  • 2–3 tablespoons milk

  • ½ teaspoon vanilla extract

Instructions

  • Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.

  • In a bowl, whisk together flour, baking soda, cinnamon, nutmeg, and salt.

  • In a separate bowl, beat the softened butter, brown sugar, and granulated sugar until light and fluffy.

  • Add the egg and vanilla extract, mixing until well combined.

  • Stir in the finely grated carrots.

  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

  • Fold in the rolled oats, chopped nuts, and raisins.

  • Scoop spoonfuls of dough onto the prepared baking sheet, spacing them a few inches apart.

  • Bake for 10–12 minutes until the edges are lightly golden.

  • Allow the cookies to cool on the baking sheet for a few minutes before transferring to a cooling rack.

  • In a small bowl, mix cream cheese, powdered sugar, milk, and vanilla extract until smooth.

  • Drizzle the glaze over the cooled cookies.

  • Let the glaze set before serving.

Notes
