Description

Cheesy baked zucchini casserole is a creamy, comforting side dish made with layers of zucchini, a savory cheese mixture, and a golden, crispy topping. Perfect for family dinners, potlucks, or holiday gatherings.


Ingredients

  • 4 medium zucchini, thinly sliced
  • 1 small onion, finely diced
  • 2 large eggs
  • 1/2 cup sour cream or Greek yogurt
  • 1 cup cheddar cheese, shredded
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup Parmesan cheese, grated
  • 1/2 tsp garlic powder
  • 1 tsp dried oregano or Italian seasoning
  • Salt and black pepper, to taste
  • 1/2 cup bread crumbs or crushed crackers, for topping
  • 2 tbsp olive oil or butter

Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a baking dish.
  2. Slice zucchini thinly and pat dry with paper towels to remove excess moisture.
  3. In a bowl, whisk together eggs, sour cream, garlic powder, oregano, salt, and pepper.
  4. Stir in cheddar and mozzarella cheese, then fold in zucchini and onion.
  5. Transfer mixture into the prepared baking dish.
  6. Top with Parmesan cheese and bread crumbs, then drizzle with olive oil or dot with butter.
  7. Bake for 30–35 minutes, until bubbly and golden brown on top.
  8. Let cool slightly before serving.
