Ingredients

  • 1 ½ pounds boneless skinless chicken breasts or thighs, diced

  • ¾ teaspoon salt

  • ½ teaspoon black pepper

  • 1 teaspoon garlic powder

  • 1 teaspoon paprika

  • 1 tablespoon olive oil

  • 1 small onion, diced

  • 2 cloves garlic, minced

  • 2 (15-ounce) cans white beans, drained and rinsed (cannellini or great northern)

  • 1 (14.5-ounce) can diced tomatoes, undrained

  • ½ cup chicken broth

  • 1 teaspoon Italian seasoning

  • 1 ½ cups shredded mozzarella or Monterey Jack cheese

  • 2 tablespoons fresh parsley, chopped

Optional Additions:

  • 1 cup fresh spinach

  • ¼ teaspoon red pepper flakes

  • 1 tablespoon fresh lemon juice

Instructions

  • Season the Chicken:
    Toss diced chicken with salt, black pepper, garlic powder, and paprika.

  • Cook the Chicken:
    Heat olive oil in a large skillet over medium heat. Add the chicken and cook 6–8 minutes until browned and fully cooked (internal temperature 165°F). Remove and set aside.

  • Sauté Aromatics:
    In the same skillet, add diced onion and cook until softened, about 3–4 minutes. Stir in minced garlic and cook for 30 seconds.

  • Build the Skillet Base:
    Add white beans, diced tomatoes, chicken broth, and Italian seasoning. Stir well and let simmer for 5–7 minutes to blend flavors and slightly reduce.

  • Return the cooked chicken to the skillet and stir to combine. Add spinach if using and allow it to wilt.

  • Add the Cheese:
    Sprinkle shredded cheese evenly over the top. Cover and cook on low heat for 3–5 minutes until melted and bubbly.

Finish with fresh parsley and a squeeze of lemon juice if desired. Serve warm.
