This Cheesy Frito Chili Casserole is a crowd-pleasing, comfort food dish that’s packed with savory chili, gooey melted cheese, and crunchy Fritos. It’s quick to prepare and ideal for busy nights, potlucks, or family gatherings.
Ingredients
- 1 lb ground beef
- 1 small onion, chopped
- 1 packet taco seasoning
- 1 cup salsa
- 1 cup chili sauce
- 1 (15 oz) can whole kernel corn, drained
- 4 cups Fritos corn chips (lightly crushed)
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 1 bunch green onions, chopped (optional for garnish)
Instructions
- Preheat your oven to 400°F (200°C).
- In a large skillet, brown the ground beef over medium-high heat, breaking it apart as it cooks. Once browned, drain any excess fat.
- Add the chopped onion to the skillet and sauté for 3–4 minutes until softened. Stir in the taco seasoning, salsa, chili sauce, and drained corn. Let it simmer for 5 minutes.
- In a greased 9×13-inch baking dish, spread half of the crushed Fritos. Top with the beef mixture, then sprinkle with half of the shredded cheddar and mozzarella cheeses.
- Add another layer of Fritos, followed by the remaining beef mixture and cheeses.
- Place the casserole in the preheated oven and bake for 9–11 minutes, or until the cheese is melted and bubbly.
- Garnish with chopped green onions if desired and serve immediately.
