Description

This Cheesy Frito Chili Casserole is a crowd-pleasing, comfort food dish that’s packed with savory chili, gooey melted cheese, and crunchy Fritos. It’s quick to prepare and ideal for busy nights, potlucks, or family gatherings.


Ingredients

  • 1 lb ground beef
  • 1 small onion, chopped
  • 1 packet taco seasoning
  • 1 cup salsa
  • 1 cup chili sauce
  • 1 (15 oz) can whole kernel corn, drained
  • 4 cups Fritos corn chips (lightly crushed)
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 bunch green onions, chopped (optional for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large skillet, brown the ground beef over medium-high heat, breaking it apart as it cooks. Once browned, drain any excess fat.
  3. Add the chopped onion to the skillet and sauté for 3–4 minutes until softened. Stir in the taco seasoning, salsa, chili sauce, and drained corn. Let it simmer for 5 minutes.
  4. In a greased 9×13-inch baking dish, spread half of the crushed Fritos. Top with the beef mixture, then sprinkle with half of the shredded cheddar and mozzarella cheeses.
  5. Add another layer of Fritos, followed by the remaining beef mixture and cheeses.
  6. Place the casserole in the preheated oven and bake for 9–11 minutes, or until the cheese is melted and bubbly.
  7. Garnish with chopped green onions if desired and serve immediately.

Vegetarian Option: Replace the ground beef with black beans, kidney beans, or a plant-based meat substitute for a vegetarian version.
