Description
Cheesy Grits Fritters are crispy on the outside and soft, cheesy on the inside. Made from chilled cheesy grits, these Southern-inspired bites are fried until golden brown and served hot as a comforting snack, appetizer, or side dish.
Ingredients
- 2 cups cooked and chilled grits (preferably thick)
- 1 cup shredded sharp cheddar cheese
- 1/4 cup grated Parmesan cheese
- 2 large eggs
- 1/3 cup all-purpose flour (more as needed)
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp baking powder (optional)
- Vegetable or canola oil, for frying
- Optional garnish: chopped chives or parsley
Instructions
- In a large bowl, combine the chilled cooked grits, cheddar cheese, Parmesan, eggs, flour, garlic powder, onion powder, salt, pepper, and baking powder (if using). Mix until fully combined and the mixture holds together.
- If the mixture is too loose, add more flour a tablespoon at a time until shapeable.
- Form small balls or patties using your hands or a cookie scoop. Place on a baking sheet.
- Chill the formed fritters in the refrigerator for at least 20 minutes to firm up.
- Heat oil in a deep skillet over medium heat to 350°F (175°C).
- Fry the fritters in batches for 2–3 minutes per side, or until golden brown. Don’t overcrowd the pan.
- Remove with a slotted spoon and drain on paper towels.
- Serve hot, garnished with fresh herbs and a dipping sauce if desired.
Notes
Make sure the grits are well chilled and thick to prevent fritters from falling apart.Use leftover cheese grits for easy prep.For a spicy twist, add diced jalapeños or cayenne pepper.Freeze cooked fritters and reheat in the oven at 400°F (200°C).Try with ranch, spicy aioli, or marinara dipping sauces.
