Instructions

  • Heat olive oil or butter in a large pot over medium heat.
  • Season diced chicken with salt, pepper, paprika, and Italian seasoning.
  • Add chicken to the pot and cook for 5–7 minutes until lightly browned and cooked through. Remove and set aside.
  • In the same pot, sauté onion for 2–3 minutes until softened. Add garlic and cook for 30 seconds until fragrant.
  • Stir in orzo and toast for 1–2 minutes.
  • Pour in chicken broth and bring to a simmer.
  • Cook for 8–10 minutes, stirring occasionally, until orzo begins to soften.
