Description

Cheesy Taco Rice is a hearty one-pan dinner featuring seasoned ground beef, tender rice, zesty taco spices, and plenty of melted cheese. It’s quick, comforting, and customizable — perfect for busy weeknights.


Ingredients

  • 1 lb ground beef (or ground turkey)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 tbsp taco seasoning
  • 1 cup long-grain white rice
  • 2 cups beef broth (or chicken broth)
  • 1 can (14.5 oz) diced tomatoes, with juice
  • 1 can (4 oz) green chilies (optional)
  • 1 1/2 cups shredded cheddar cheese (or Mexican blend)
  • 1 tbsp olive oil or vegetable oil
  • Salt and pepper, to taste
  • Fresh cilantro or green onions, for garnish (optional)

Instructions

  1. Heat oil in a large skillet over medium heat.
  2. Add ground beef and diced onion, cooking until beef is browned and onion is softened; drain excess fat.
  3. Stir in garlic and cook for 1 minute until fragrant.
  4. Mix in taco seasoning, rice, broth, diced tomatoes, and green chilies. Stir well.
  5. Bring to a boil, reduce heat to low, cover, and simmer for 18–20 minutes until rice is tender and liquid absorbed.
  6. Remove from heat and stir in shredded cheese until melted and creamy.
  7. Season with salt and pepper to taste, garnish with cilantro or green onions, and serve.

Notes

For extra heat, add jalapeños or more chili powder.Add corn, black beans, or bell peppers for a veggie boost.Swap beef for diced cooked chicken or plant-based crumbles for variations.To make low-carb, use cauliflower rice and reduce broth accordingly.
