Instructions

Prepare the Pan:
Line an 8×8-inch baking pan with parchment paper or lightly grease it to prevent sticking. -
Melt Wet Ingredients:
In a medium saucepan, combine peanut butter, honey, and coconut oil. Heat over medium heat, stirring occasionally, until smooth and simmering. -
Add Flavorings:
Remove the saucepan from heat and stir in vanilla extract and sea salt. -
Combine Dry Ingredients:
In a large mixing bowl, combine rolled oats and chopped almonds. -
Mix Wet and Dry Ingredients:
Pour the wet mixture over the dry ingredients and stir until evenly coated. -
Add Chocolate Chips:
Allow the mixture to cool slightly before folding in mini chocolate chips to prevent them from melting. -
Press into Pan:
Transfer the mixture into the prepared pan. Use parchment paper or the back of a spoon to press it firmly into an even layer. -
Chill:
Refrigerate for at least 2 hours until the bars are firm and set. -
Slice and Serve:
Once chilled, lift the bars from the pan using the parchment paper, then slice into squares or rectangles.
