Description

Ingredients

  • 2 cups cooked chicken, shredded or chopped
  • 1 lb Velveeta cheese, cubed
  • 1 can (10 oz) diced tomatoes with green chilies (e.g., Rotel, undrained)
  • 4 oz cream cheese (optional)
  • 1/4 cup milk or chicken broth (as needed to thin)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper, to taste
  • Chopped green onions or jalapeños (optional, for garnish)

Instructions

  1. In a large saucepan or skillet, combine cubed Velveeta and cream cheese over medium heat. Stir frequently until melted and smooth.
  2. Add the shredded chicken and the entire can of diced tomatoes with green chilies. Stir to combine.
  3. Season with garlic powder, onion powder, salt, and pepper.
  4. If the dip is too thick, stir in a splash of milk or chicken broth until desired consistency is reached.
  5. Cook for an additional 5–7 minutes, stirring frequently, until hot and bubbly.
  6. Transfer to a serving bowl or a slow cooker set to “warm” to keep it hot during serving.
  7. Garnish with green onions or jalapeños if desired. Serve with tortilla chips, crackers, or vegetables.
