Description

Chicken Skewers are a flavorful and versatile dish made with marinated chunks of chicken, grilled or baked to juicy perfection. They’re quick to prepare, perfect for weeknights or parties, and easily customizable with your favorite seasonings and vegetables.


Ingredients

  • 1.5 lbs boneless, skinless chicken breasts or thighs
  • 3 tbsp olive oil
  • 2 tbsp lemon juice
  • 3 cloves garlic, minced
  • 1 tsp paprika
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1/2 tsp black pepper
  • Wooden or metal skewers
  • Optional: chopped parsley, red onion, bell peppers, or cherry tomatoes for threading

Instructions

  1. If using wooden skewers, soak them in water for 30 minutes to prevent burning.
  2. Cut the chicken into bite-sized chunks and place in a mixing bowl.
  3. In a separate bowl, mix olive oil, lemon juice, garlic, paprika, oregano, salt, and pepper to make the marinade.
  4. Pour the marinade over the chicken, toss to coat, cover, and refrigerate for at least 30 minutes (up to 4 hours).
  5. Preheat grill, oven, or stovetop grill pan to medium-high heat (about 400°F/200°C).
  6. Thread the marinated chicken onto skewers, alternating with vegetables if desired.
  7. Grill or bake for 10–15 minutes, turning halfway through, until chicken is fully cooked and lightly charred.
  8. Let rest for a few minutes before serving. Garnish with fresh parsley if desired.
