Description
Chicken Tetrazzini is a creamy pasta casserole featuring tender chicken, mushrooms, and noodles in a rich cheese and white wine sauce. Baked until bubbly and golden, it’s comforting and satisfying.
Ingredients
- 3 cups cooked chicken, shredded or diced
- 12 oz egg noodles
- 4 tbsp butter
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 8 oz mushrooms, sliced
- 1/4 cup all-purpose flour
- 2 cups chicken broth
- 1/2 cup white wine (optional)
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 cup shredded mozzarella or Gruyère cheese
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp fresh parsley, chopped
Instructions
- Preheat oven to 350°F (175°C).
- Cook egg noodles according to package directions until al dente. Drain and set aside.
- In a large skillet, melt butter over medium heat. Add onion and cook until softened, about 3–4 minutes.
- Add garlic and mushrooms. Cook until mushrooms release moisture and become tender, about 5–6 minutes.
- Sprinkle flour over the vegetables, stir, and cook for 1 minute to eliminate the raw flour taste.
- Gradually whisk in chicken broth and white wine (if using). Cook, stirring constantly, until the sauce thickens, about 3–4 minutes.
- Stir in heavy cream and bring to a gentle simmer. Add Parmesan cheese, salt, and pepper. Stir until smooth.
- Add cooked chicken and egg noodles to the sauce and mix until evenly coated.
- Transfer mixture to a greased 9×13-inch baking dish. Sprinkle shredded mozzarella or Gruyère cheese on top.
- Bake for 25–30 minutes, or until bubbly and golden on top.
- Let rest for a few minutes before serving. Garnish with chopped parsley.
