Description

Ingredients

  • 2 cans (13.5 oz each) full-fat coconut milk

  • 1/2 cup granulated sugar (or sweetener of choice)

  • 1/2 cup unsweetened cocoa powder

  • 1 teaspoon vanilla extract

  • 1/4 teaspoon salt

  • 1/4 cup dairy-free chocolate chips (optional, for added texture)

  • 1/4 cup coconut flakes (optional, for garnish)

Instructions

  • Prepare the Coconut Milk Base: In a medium saucepan, combine the coconut milk, sugar, and cocoa powder. Heat over medium heat, whisking constantly until the sugar dissolves and the cocoa powder fully incorporates. Do not let it boil. Cook for 2-3 minutes, then remove from heat.

  • Add Flavor: Stir in the vanilla extract and salt. Let the mixture cool to room temperature.

  • Chill the Mixture: Once cooled, place the mixture in the refrigerator for 2-3 hours until completely chilled.

  • Churn the Ice Cream: Pour the chilled mixture into an ice cream maker and follow the manufacturer’s instructions (about 20-25 minutes) until the ice cream reaches a soft-serve consistency.

  • Add Mix-ins (Optional): If using chocolate chips or coconut flakes, add them during the last 2-3 minutes of churning.

  • Freeze the Ice Cream: Transfer the ice cream to an airtight container and freeze for at least 4 hours or until fully set.

  • Serve: Scoop the ice cream into bowls or cones and enjoy! If too firm, let it sit at room temperature for a few minutes to soften before serving.


Notes

For a chocolate fudge swirl, add fudge sauce between the layers when freezing the ice cream.Add 1-2 teaspoons of peppermint extract for a refreshing mint chocolate flavor.You can also add chopped nuts for added crunch or a peanut butter swirl for a rich twist.
