Instructions

  1. Preheat oven to 160°C (325°F) and line a baking sheet with parchment paper.
  2. In a large bowl, mix rolled oats and cocoa powder until evenly combined.
  3. In a small saucepan or microwave-safe bowl, warm peanut butter, maple syrup (or honey), and coconut oil until smooth.
  4. Stir in vanilla extract and salt.
  5. Pour the wet mixture over the dry ingredients and mix thoroughly to coat.
  6. Spread the mixture evenly onto the prepared baking sheet, pressing lightly for clusters.
  7. Bake for 20–25 minutes, stirring halfway through, until crisp.
  8. Remove from oven and let cool completely.
  9. Stir in chocolate chips, nuts, and seeds after cooling.
  10. Break into clusters and serve.

Notes

For larger clusters, press the granola firmly before baking and avoid over-stirring.Add dried fruits after baking to prevent burning.Adjust sweetness by reducing maple syrup or honey.Let granola cool fully to achieve maximum crunch.
