Ingredients
- 1 package ladyfingers (savoiardi)
- 8 oz mascarpone cheese
- 1 cup pumpkin puree
- 1 cup heavy whipping cream
- 1/2 cup powdered sugar
- 1 teaspoon pumpkin pie spice
- 1 teaspoon vanilla extract
- 1 cup brewed espresso or strong coffee, cooled
- 2 tablespoons cocoa powder (for dusting)
- 1/3 cup dark or semi-sweet chocolate, shaved or chopped
- Optional: Halloween sprinkles or themed candies for decoration
Instructions
- Whip the heavy cream in a mixing bowl until soft peaks form. Set aside.
- In a separate bowl, beat mascarpone cheese, pumpkin puree, powdered sugar, pumpkin pie spice, and vanilla extract until smooth.
- Gently fold the whipped cream into the pumpkin mascarpone mixture until fully combined.
- Quickly dip ladyfingers into the cooled espresso one at a time (do not oversoak).
- Layer dipped ladyfingers in the bottom of a baking or trifle dish.
- Spread half of the pumpkin cream mixture over the ladyfingers and smooth the top.
- Sprinkle with shaved chocolate or dust with cocoa powder.
- Repeat with a second layer of dipped ladyfingers and the remaining pumpkin cream.
- Finish with a dusting of cocoa powder and more shaved chocolate.
- Cover and refrigerate for at least 4 hours, preferably overnight.
- Before serving, add Halloween-themed decorations like candy eyes or sprinkles if desired.
