Description
Chocolate Swirl Pistachio Ice Cream is a rich and creamy frozen dessert featuring real pistachios blended into a custard base with luxurious swirls of dark chocolate. This gourmet-style ice cream is both indulgent and refreshing, perfect for any occasion.
Ingredients
- 1 cup shelled unsalted pistachios
- 2 cups whole milk, divided
- 1 cup heavy cream
- 3/4 cup granulated sugar, divided
- 4 large egg yolks
- 1 tsp vanilla extract
- 1/4 tsp salt
- 4 oz dark or semi-sweet chocolate, chopped
- 2 tbsp heavy cream or milk (for chocolate swirl)
Instructions
- In a blender or food processor, combine pistachios, 1/2 cup sugar, and 1 cup milk. Blend until finely ground and smooth. Set aside.
- In a saucepan, heat the remaining 1 cup milk, heavy cream, and remaining 1/4 cup sugar over medium heat until warm but not boiling.
- In a separate bowl, whisk egg yolks. Slowly pour a bit of the warm milk mixture into the yolks to temper, whisking constantly.
- Return the tempered yolk mixture to the saucepan. Cook over low heat, stirring constantly, until it thickens enough to coat the back of a spoon (about 170–175°F / 77–80°C).
- Remove from heat. Stir in the pistachio mixture, vanilla extract, and salt. Let cool slightly, then chill in the refrigerator for at least 4 hours or overnight.
- To make the chocolate swirl, melt the chopped chocolate with 2 tbsp cream or milk in a microwave or double boiler. Stir until smooth and let cool to room temperature.
- Churn the chilled pistachio mixture in an ice cream maker according to manufacturer’s instructions (about 20–25 minutes).
- As you transfer the churned ice cream to a container, layer spoonfuls of melted chocolate between layers of ice cream. Use a knife to gently swirl.
- Freeze the layered ice cream for at least 4 hours until firm before serving.
