Description

Christmas Shortbread Cookie Bites are festive, buttery, bite-sized treats with a melt-in-your-mouth texture and colorful sprinkles, perfect for holiday cookie trays and gifting.


Ingredients

  • 1 cup unsalted butter, softened
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1/4 tsp salt
  • 1/3 cup Christmas sprinkles (red, green, or multicolored nonpareils)

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream the softened butter and powdered sugar until light and fluffy.
  3. Mix in the vanilla extract.
  4. Gradually add flour and salt, mixing until a soft dough forms.
  5. Gently fold in the Christmas sprinkles to distribute evenly.
  6. Transfer dough to a clean surface and roll into a log about 1 inch thick.
  7. Cut the log into small 1/2-inch cubes.
  8. Place cookie bites on the prepared baking sheet, spacing slightly apart.
  9. Bake for 10–12 minutes, or until bottoms are just lightly golden.
  10. Let cool completely on the baking sheet before serving or storing.
