Description

Cilantro Chicken is a vibrant, zesty dish featuring tender chicken marinated in a blend of fresh cilantro, garlic, lime, and spices. Perfect for grilling, baking, or pan-searing, it’s a healthy and flavorful choice for any meal.


Ingredients

  • 1.5 lbs boneless, skinless chicken breasts or thighs
  • 1 cup fresh cilantro, packed
  • 3 cloves garlic
  • 2 tbsp lime juice
  • 3 tbsp olive oil
  • 1 tsp ground cumin
  • 1 tsp salt
  • 1/2 tsp black pepper
  • Optional: 1 jalapeño or green chili for heat

Instructions

  1. In a blender or food processor, combine cilantro, garlic, lime juice, olive oil, cumin, salt, and pepper. Blend until smooth.
  2. Place chicken in a bowl or zip-top bag and pour marinade over it. Toss to coat evenly.
  3. Marinate in the refrigerator for at least 30 minutes, ideally 2–4 hours.
  4. Preheat grill, oven, or skillet over medium-high heat.
  5. Remove chicken from marinade and cook:
  6. – Grill: 5–7 minutes per side
  7. – Bake: 400°F (200°C) for 20–25 minutes
  8. – Pan-sear: 6–8 minutes per side
  9. Ensure internal temperature reaches 165°F (74°C).
  10. Let rest for 5 minutes before slicing and serving.

Add Greek yogurt or coconut milk to the marinade for a creamy version.Use parsley or basil if you don’t like cilantro (flavor will vary).Marinate overnight for deeper flavor.Pairs well with rice, quinoa, roasted vegetables, or in wraps.Great for meal prep—stores and reheats well.
